Tomorrow, February 21st, is Pancake Day! A festival which, in Paris as elsewhere, is also the joy of gourmet!

Pancake Day, a joyful and tasty folk tradition

Pancake Day marked the end of Shrovetide and the beginning of Lent, synonymous with fasting and abstinence. The tradition in Paris and abroad was to fill up before this frugal period. Lent may not be as popular nowadays but Pancake Day is still celebrated and revered by children who dress up especially for the occasion.

Foodies love the traditional doughnuts also popular during this period of the year!

It couldn’t be easier to make this traditional treat:

> Bring ¼ of a litre of water to the boil in a large pan and add a tablespoon of salt, a tablespoon of sugar, 70g of butter, cinnamon and lemon zest.

> Pour 150g of flour into the mix and stir until the batter splits.

> IAdd an egg and mix well then add 3 more eggs one at a time.

> Use spoons to shape the batter into little balls and fry in oil.
